BEEF RIBS IN KECAP MANIS

INGREDIENTS (SERVES 2)
1L chicken stock
4 short beef ribs
2 garlic cloves, diced
1 lemongrass stick, roughly chopped
1 red chilli, finely diced
2cm knob of ginger, finely diced
3 shallots, diced
1 tbs soy sauce
1 tbs kecap manis
2 chat potatoes, cut into quarters
8 cherry tomatoes, halved
handful of coriander rounghly chopped
Cover the beef ribs in oil and salt and place them onto a hot pan over a medium heat. Cook until each side is caramelised and then take them out of the pan.
In the same pan used for the beef add the garlic, lemongrass, chilli and ginger. As soon as all the ingredients are fragrant add the shallots and leave to cook for a couple of minutes. Next add the soy sauce, manis, stock and beef. Bring the stock to a boil and let it reduce by about 1/4. Once reduced add the potatoes. Let it come back to a boil and add the tomatoes. When the potatoes have softened turn the heat off.
Add the lime juice and sprinkle with coriander.
