HARVEST PASTA SALAD
PREPARATION: 10min ~ COOK: 30min ~ READY IN: 30min
INGREDIENTS (SERVES 6)
10 cherry tomatoes cut in half
1 small Zucchini, cut into spaghetti ribbons (you can use a mandolin for this)
2 cups of cooked rigatoni pasta
2 chorizo sausages cut in to round
1 small sweet potato, cut into 1cm cubes
1 red onion, cut into 8 wedges
Persian feta to taste, I like lots
1 bunch of picked basil leaves
1 bunch of picked flat leaf parsley leaves
1 tablespoon of quality olive oil
Salt and pepper to taste
Preheat the oven to 180 degrees.
Place the sweet potato, chorizo, and onion in a small roasting tray. Drizzle with olive oil and season with salt and pepper and roast in the oven for 25mins.
Take the sweet potato, chorizo and red onion out of the oven and allow to cool for 5mins.
Gently toss all the ingredients together, I find its best to do this with your hands. Season with salt and pepper and garnish with some extra basil and parsley leave and serves
