HOT SMOKED SALMON WITH POTATO SALAD

INGREDIENTS (SERVES 2)
1 Huon wood roasted salmon fillet
4 chat potatoes, boiled and quartered
handful rocket leaves
1/2 cup creme fraiche
1/4 cup Ashgrove cream
1 tbs Hill Farm moroccan wholeseed mustard
Add the potatoes and flake the salmon on top of a bed of rocket.
To make the dressing combine the creme fraiche, cream, lemon juice, pinch of salt and mustard together. Pour over the salmon and serve.
