HOME MADE TORTILLAS
PREPARATION: 30min ~ COOK: 15min ~ READY IN: 45min
INGREDIENTS (MAKES 12-15)
1 cup of yellow, white or blue corn masa harina
1tbs salt flakes
1 cup of warm water
Combine all the ingredients in a large bowl and mix with a wooden spoon or hands to form a firm dough. Turn out the dough onto a floured surface and knead well for 5mins until its firm and no longer tacky. Place back in the bowl and cover with cling film and allow to rest for 1 hour
Pinch off portions of dough about the size of a golf ball, roll them so they are reasonably symmetrical. If you have a tortilla press open it and line it with silicon paper place the ball of dough in the middle and press down on the tortilla press. If you don’t have a press place the ball of dough on a piece of silicon paper and press down on it with your palm then place another piece of silicon paper on top and roll out with a rolling pin till the tortilla is about 2mm or thinner.
Heat a large pan over a medium heat and fry the tortillas as you make then in a dry pan, after 2mins flip the tortilla it should have a little color, fry the other side for 1 to 2mins. Place a clean tea towel on a plate as you dry fry the tortillas wrap them in the tea towel to keep them warm and stop them drying out.
To make Tostadas:
Cut the dry fried tortillas into 5cm rounds and deep fry for 1 to 2 minutes in medium oil then drain on absorbent paper and season with salt.
