MUSSELS IN CURRY BROTH
PREPARATION: 10min ~ COOK: 5min ~ READY IN: 20min
- Into a hot saucepan pan add bacon and sauté for 4 minutes or until until crispy.
- Add some water and your mussels to the saucepan with the bacon, close the lid and steam for approximately 3 minutes until the mussels are cooked.
- Remove the cooked mussels from their shells and set aside while you warm the soup. Once the soup is hot add the mussels and warm through.
Serve topped with fresh chilli, a squeeze of lemon and parsley.
