CRUSHED TOMATO SALAMI PASTA

- Into a warm pan add your anchovies, oil, garlic, 1⁄2 the salami and sauté for around 5 minutes on a low and slow temperature.
- Add the tomatoes and reduce the sauce by cooking on high for around 2 minutes, stirring constantly. Add the pasta and fold through. Reduce for a further 2 minutes and add the leftover salami to warm through.
- To serve dot with mascarpone, top with basil and drizzle with garlic infused oil, season with salt and pepper.
