BLACK FOREST MEETS MEXICO

- Over a double boiler melt the dark chocolate and milk chocolate. Add 100g sour cream and melt to combine.
- Peel the avocados and put them into a food processor, add a pinch of salt and lime juice and blend until smooth.
- Add the melted chocolate to the avocado and blitz again. Put the mixture into a piping bag and refrigerate. Put some extra sour cream into a small piping bag and refrigerate until ready to serve.
- To serve into a bowl, place some cherries, pipe the sour cream, chocolate mousse. Crush the chocolate biscuits to make a crumb. Top with the crumb, extra cherries and garnish with some basil, and a dust of chilli.
