ANDY'S TRUFFLE TAGLIATELLE
PREPARATION: 5min ~ COOK: 10min ~ READY IN: 15min
- Cook tagliatelle in a pot of salted water until al dente. Meanwhile, in a separate pan add wine on a medium heat and reduce by half. Once reduced add the butter. Grate in the parmesan and truffle and a good amount of cracked pepper.
- Add a splash of oil to the pan. Spoon the pasta straight out of the pot into the pan with the wine, along with roughly three spoonfuls of the pasta water which will help emulsify the sauce. Toss this through to combine well and serve into bowl, garnish with grated parmesan and truffle.
