LYNTON'S GRILLED COS SALAD
PREPARATION: 10min ~ COOK: 5min ~ READY IN: 20min
- Heat a chargrill pan over a high heat.
- Cut each cos lettuce in half lengthwise and drizzle with oil, and season with salt. Place the cos cut side down into the griddle pan and cook evenly until each piece has blackened char grill marks.
- To make the dressing into a bowl combine the capers, lemon juice and a drizzle of oil, mix gently with a fork to combine.
- To serve lay the cos on a plate drizzle with dressing, parmesan, anchovies and chopped egg yolks.
