GRANT'S PALE ALE AND FLATHEAD TAIL

INGREDIENTS (SERVES 2)
BEER BATTERED FLATHEAD TAILS
2 flathead fillets
8 prawns, peeled
3 cups plan flour and extra for the batter
1 bottle pale ale
2 handfuls of ice
2 chat potatoes, boiled and cut into wedges
Hillfarm canola oil
szechuan pepper, ground
Preheat oven to 180 degrees.
Sieve the flour into a bowl and slowly whisk in the pale ale and keep whisking until a smooth consistency is formed. Next add the ice and season with a pinch of salt. Set aside.
Place the wedges onto a baking tray and drizzle with oil. Cook them in the oven for 15 minutes.
Mix the pepper in with some flour and coat the flathead. Next dip the flathead into the wet batter and straight into a boiling pot of oil. Cook each fillet for around 1 minute. Coat the prawns in the pepper mix and transfer into the pot of oil for a minute.
