WHOLE BAKED HUON SALMON
PREPARATION: 10min ~ COOK: 20min ~ READY IN: 35min
1 whole side of salmon
1 bunch Vietnamese mint
1 green chilli, finely diced
1 red chilli, finely diced
1 knob of ginger, sliced thinly
1 clove of garlic, minced
2 tbsp maple syrup
2 tbsp ketchup manis
2 tbsp light soy
Handful cherry tomatoes, halved
1/2 bunch coriander, roughly chopped
1/2 cucumber, thinly sliced
2 breakfast radishes, sliced thinly
1/4 orange, segmented
1/4 lime, segmented

- Preheat oven to 150 degrees celsius. Place whole salmon side on a lined baking tray.
- In a small mixing bowl combine chilli, ginger, garlic, maple syrup, ketchup manis, and light soy. Paint the salmon with the marinade and bake for approximately 10 minutes.
- Baste again and bake for a further 10 minutes. Serve topped with crisp salad, dressed with remaining marinade.
