POACHED APRICOTS & GRANOLA
PREPARATION: 30min ~ COOK: 10min ~ READY IN: 45min
2 1/2 cups water
250 g caster sugar
1 cinnamon quill
5 cardamom pods
1 tbsp vanilla paste or 1 vanilla bean pod, beans scraped
1/4 cup lemon juice
2⅓ cups dried apricots, or substitute with your favourite dried fruit
Anytime Granola and natural yoghurt, to serve
Pulp of 1 fresh passion-fruit, to serve
Fresh mint, to serve
- Combine water, sugar, spices and lemon juice in a large pan over high heat. Bring to the boil and cook, stirring, until the sugar dissolves.
- Reduce heat to medium-low and add apricots. Cook for 10 minutes or until apricots are plump and tender.
- Remove from heat. Cover with plastic wrap. Set aside to cool.
- To serve, spoon yoghurt into a bowl and top with pre-prepared Anytime Granola mix. Squeeze passion-fruit over the top and garnish with mint leaves.
