LYNTON'S SCALLOP CARPACCIO

- Slice the scallops very thinly, arrange the scallops on a plate.
- Make a vinaigrette with the lime, ginger and a drizzle of oil.
- Place all ingredients onto the plate with the scallops and drizzle with vinaigrette and garnish with baby chard.
