AVOCADO & HONEY ICE CREAM
PREPARATION: 10min ~ SETTING: 30min ~ READY IN: 45min
- In a large pan on medium-heat add the sugar and Xanthan gum, mix together. Add in glucose, honey, milk and water bring these ingredients to a simmer. Allow this to cool for around 5 minutes before adding the avocados.
- Peel and chop avocados, add to the pan with lemon juice, blitz the mixture with a stick blender until thick and creamy.
- Place your ice cream bowl into the freezer for approximately 30 minutes so it is ice cold. Ladle ice cream into the bowl of planetary mixer or ice cream maker and churn on low until it is set.
