LEMON LIME CURD
PREPARATION: 5min ~ COOK: 10min ~ READY IN: 30min
INGREDIENTS (makes one big jar)
¾ cup sugar
5 egg yolks
1 whole egg
½ cup lemon juice
½ cup lime juice
1 teaspoon vanilla paste
In a glass mixing bowl, whisk together the sugar and eggs until pale and fluffy.
Place a saucepan half filled with water on the heat and fit the glass bowl on top of it (make sure the bowl is not touching the water). Add the juice, vanilla and butter to the egg mixture and whisk over the boiling water until the mixture thickens.
Once the mixture has thickened take off the heat and allow to cool.
If you’re like me you will eat all of this with in a couple of days but if you want to keep it place it in a sterilised jar in the fridge.
