CAPE GRIM EYE FILLET

2 tbsp Hillfarm Canola Oil
1 Cape Grim Eye Fillet Steak, brushed with oil
Salt and pepper, to season
- Into a very hot medium-sized pan add the oiled eye fillet steak and season the exposed uncooked side with salt.
- After approximately 1.5 minutes turn the steak. The steak should be caramelised and brown. Season the now exposed cooked side with extra salt. Cook the steak for approximately 1.5 minutes for “medium well” (or longer to cook to your liking).
- Remove the steak from the pan and allow the steak to rest for approximately 3 minutes.
- To serve season again with salt and pepper. Carve the steak or serve it whole with your choice of accompaniment.
