- In a medium-sized pot add sugar, vinegar, water and pinch of salt, bring up to the boil.
- Meanwhile, in a separate bowl combine the butter and mustard powder. Cut slices of the rye bread and butter two sides. Place these slices into another pan on medium heat and toast. Once the sugar, vinegar and water has boiled add in the cabbage and turn of the heat. Let sit for approximately 10 minutes.
- Take bread out of the pan, cut slices of cheese and place on toasted side of bread, blow torch the cheese to melt, alternatively place under a grill. Top with the roast beef and cabbage. Butter the top side of sandwich and place face down and toast, repeat this on the other side of the sandwich.
