INGREDIENTS (MAKES 12)
800g beef mince
1 tsp chilli flakes
1 garlic clove, finely diced
2 spring onion, finely diced
handful of mint stems, roughly chopped
handful of coriander stems, roughly chopped
1/4 cup bread crumbs
1 tbs coriander seeds, ground
1 lemon zest
handful mint leaves, roughly chopped
1 cup greek yoghurt
1 tsp cumin powder
Add to a mixing bowl the beef, chilli, garlic, spring onion, mint and coriander stems, bread crumbs, egg, lemon zest and a pinch of salt. Mix together with your hands. Pinch a small piece and put in a hot pan over a medium heat. Check if it needs anymore seasoning. Roll the mince into balls just bigger than a golf ball size. Cook them in a pan over a medium heat.
To make the dressing mix all the ingredients in a bowl until combined. Smear the dressing across a plate and serve the koftas on top.
