- Preheat the oven to 160 degrees Celsius and line a baking tray with baking paper. In a large bowl, cream the butter and sugar together. Add the flour and custard powder in batches and mix to make a dough.
- Roll the dough into small balls and place on the baking paper at even intervals. Flatten with a fork—dip the fork into flour every few presses to prevent the fork from sticking to the dough. Bake for 17–20 minutes or until lightly coloured. Remove from the oven and set aside on a wire rack to cool.
- Mix together the icing sugar and passion fruit pulp, to a very stiff consistency. Once the biscuits are cool, wedge two biscuits together with the passion fruit icing in the middle.
