SCOTTY'S LAMB RACK WITH MINT

- Combine all marinade ingredients into a bowl. Set aside half the marinade to use later.
- Place your lamb into the marinade and rest for two hours minimum, preferably 6-8 hours or overnight.
- To cook the lamb place over an open flame fat side down, first and cook to your liking. Remove from grate, drizzle with remaining marinade, olive oil and season with salt. Garnish with lemon wedge and a spring of fresh mint.
