PEA & BACON MACCHERONI
PREPARATION: 10min  ~  COOK: 8min  ~  READY IN: 20min


INGREDIENTS 
(SERVES 2)
500 g chicken mince
2 rashers bacon, diced
1 clove garlic, crushed
1⁄2 cup peas
1 red onion, finely sliced
1 bunch mint leaves
1⁄2 cup Ashgrove Parmesan, grated
2 chillis, 1 de-seeded and diced, 1 sliced to garnish
1 packet Barilla Maccheroni pasta

DIRECTIONS
  1. Cook the pasta in salted water until al dente.
  2. Into a hot pan add the chicken mince, bacon, diced chilli, garlic, and sauté for 5 minutes.
  3. After 5 minutes drain the pasta and add it to the pan with the peas, onion, sliced chilli and mint. Warm the pasta through and top with fresh mint and parmesan to serve.
