QUINOA CHICKEN LARB

INGREDIENTS (SERVES 6)
500g chicken mince
Hillfarm canola oil
2cm knob of ginger, finely diced
2 lemongrass sticks, finely diced
1 red chilli, finely diced
1 cup quinoa
1/2 cucumber, de-seeded and diced
1 tbs fish sauce
1 tbs soy sauce
bunch of coriander, roughly chopped
handful of brean sprouts
In an oiled pan over a medium heat add the ginger, lemongrass and chilli. Once aromatic caramelise the chicken mince.
Cook the quinoa in a boiling pot of water for 8-12 minutes. Strain.
Once the chicken has caramelised add the cucumber, fish and soy sauce. Mix everything together with the quinoa and turn the heat off.
Add the coriander and bean sprouts on top. Serve.
