APPLE, FENNEL AND SALMON SALAD
INGREDIENTS (SERVES 4)
1 green apple
1 cos lettuce wedge
½ cup walnuts, toasted
8 red grapes, chopped
1 cracked black pepper and lemon hot smoked salmon fillet
4 soft poached eggs
2 tbs creme fraiche
1 lemon, zest and juice
Put creme fraiche, lemon zest and lemon juice in a bowl with a pinch of salt and whisk.
Grate apple into batons and drizzle vinegar on top then grate fennel into rounds and toss with apple batons.
Chop cos lettuce wedge into sixths and tear apart salmon into bite sized pieces
Smear crème fraiche dressing on plate and build layers of the salad. Salmon, grapes, coz lettuce wedge, fennel and apple, soft poached egg and walnuts. Season with salt. Garnish with fennel fronds and mint
