MIXED BERRY COBBLER
PREPARATION: 15min ~ COOK: 45min ~ READY IN: 1 hr 5min
- Preheat oven to 180 degrees celsius.
- Sift 200 g flour and the baking powder into a bowl and set aside. Beat butter and 195 g caster sugar in an electric mixer until light and fluffy (4-5 minutes), scraping down the sides of the bowl occasionally. Gradually add the eggs, beating to combine, then add 30 g of flour mixture, and again beat to combine. Add milk then remaining flour mixture, then beat until smooth. Set aside.
- Combine mixed berries, rum, vanilla, 25 g caster sugar and remaining 40 g flour in a separate bowl, then spoon into a 1.75 litre oven proof dish, and dollop butter over berry mixture. Combine cinnamon and remaining caster sugar in a small bowl, scatter over cobbler and bake until golden. Ensure a skewer can be inserted and removed clean (35-40 minutes). Dust with icing sugar and serve with cream or ice cream.
