SUGAR AND SPICE PIZZAS
INGREDIENTS (MAKES 2 PIZZAS)
2 pita bread bases
2 prawns, whole
1 chorizo, diced
garlic infused canola oil, drizzle
1 tbs tomato paste
1 chilli, thinly sliced
3 cherry tomatoes, halved
1/4 block of feta
lemon juice, optional
2 bananas, thinly sliced
2 tbs brown sugar
1 tbs marscapone
3 tsp ricotta cheese
coconut chips, handful
1 tsp agave or mayple syrup
Preheat the oven to 220 degrees.
Peel and de-head the prawns and put aside. Place the shells including the heads into a small cold fry pan. Add half of the sliced chorizo and canola oil and turn the heat on, this will make your oil.
In the mean time, toss the bananas, walnut and brown sugar in a small bowl and put aside. Line your baking tray and place the bases on top, evenly spread tomato paste on one base and marscapone on the other.
Take your pan off the heat and stir through a few slices of chilli while the pan is still hot.
Start building your pizzas.
For the tomato base, evenly place the uncooked chorizo half, prawns (roughly chopped), feta (crumbled) and a few chilli slices. Use some of the oil from the cooked ingredients and drizzle on top. Begin making the sweet pizza by placing the sugar coated banana, walnuts and ricotta cheese. Place pizzas in the oven for 15 minutes or until bases are crispy.
Take the pizzas out of the oven.
Add the spinach, another drizzle of the oil from the cooked ingredients and lemon juice for extra flavour to the savoury pizza. Sprinkle coconut chips and drizzle the syrup to finish the sweet pizza.
Slice the pizzas and it is ready to serve.
