HOT SMOKED OCEAN TROUT
PREPARATION: 20min ~ COOK: 20min ~ READY IN: 45min
- Cure the ocean trout with your salt for approximately 10 minutes.
- Over a hot fire throw some thyme and then on a grilling rack place your salmon and roast approximately five minutes.
- To plate into a small bowl combine your shaved celery, celery leaves, clam stock, oil, and fruit. Place your ocean trout into your bowl and top with your celery.
