CHICKEN & CHORIZO BOLOGNESE

- Put the chorizo into a food processor and blitz to a fine mince. Put the chorizo into a cold frypan and bring it up to a high-heat. Add the onion, and garlic and sauté for around 5 minutes before adding the chicken mince.
- Add the chicken mince, the tomatoes, and chipotle chilli sauce.
- Start cooking the pasta for around 5 minutes. Then place the eggs into the boiling water with the pasta for approximately 4 minutes, to poach them softly. Refresh the eggs in cold water. Add the cooked spaghetti to the pan with the sauce and fold through.
- To serve peel the eggs, and place on top of the spaghetti. Garnish with shiso.
