LYNTON'S BROCCOLI SALAD
PREPARATION: 10min ~ COOK: 10min ~ READY IN: 20min
- Cut your broccoli into florets and blanch in salted boiling water and set aside. Shave your broccoli stems with a peeler and place into a bowl with the blanched florets.
- For the vinaigrette, in a separate bowl combine the lemon juice and oil. Pour the vinaigrette over the broccoli and season with a pinch of salt. Roughly chop the hazelnuts and add to the broccoli.
- Put salad in a bowl and top with torn bocconcini and grated goat's cheese.
