NANA'S SCONES

INGREDIENTS (MAKES 6)


2 cups self raising flour

1 tsp baking powder

2 x cm blocks of butter

1/2 cup milk

1 egg

salt, pinch

DIRECTIONS

Preheat oven to 200 degrees.

Start by adding the self raising flour but leave a little for dusting later on, baking powder and butter into to a large mixing bowl. Crumble the butter between your fingers until it looks and feels like bread crumbs. Add a pinch of salt.

Flick a small amount of water on the baking tray so nothing slides and line the tray.

Move on to your wet ingredients. Add milk and egg to a small bowl and whisk. Make a well in the center of your dry ingredients and add in the rest of your mixture and cut through the mixture with a knife. With your hands gently mix the mixture by rolling it around the bowl picking up all loose bits. Do not over work it. Dust the rest of your flour on a board and place mixture on top. Knead the dough in a circular motion and pat on top until you get a nice thick circle. Use a glass to cut into circles. Place onto the baking tray and brush the scones with milk and cook for 12 minutes.

Serve with jam and cream.
