POPCORN PORK AND CHICKEN
INGREDIENTS (MAKES 5)
100g chicken thigh pieces
100g pork ribs
small handful of black pepper corns
small handful of cumin seeds
small handful of coriander seeds
1/2 cup flour
Start by making the spice mix. Add pepper corns, cumin seeds and coriander seeds into a mortar and pestle and grind the spices. When you are almost done add 2 big pinches of salt and continue grinding.
In a zip lock bag add two handfuls of the chicken pieces and pork ribs pour the spice mix in and flour zip the bag and shake well.
Fill a quarter of a pot with oil, making sure it's hot and bubbling, drop in your batch of mix in for 1 minute. Have a roasting tray with 2 chux lining the tray to help soak up the excess oil ready and place the cooked chicken and pork pieces on top. Season with salt.
To complete the dish serve in small popcorn boxes.
