ADULT'S CHOCOLATE CAKE
INGREDIENTS (MAKES 1)
200g dark chocolate
4 knobs of butter
1/2 cup sugar
2 espresso shots
1 tsp vanilla paste
1 cup flour
blueberries to garnish
coffee beans to garnish
1/4 cup whisky
1 cup cream
2 heaped tsp icing sugar
Preheat oven to 180 degrees.
First step to making this cake is to put the chocolate, butter, sugar, espresso shots and vanilla paste into a pot on meidum heat. Stir a few times.
While you are waiting for the ingredients to melt separate your eggs into a mixmaster. Keep the egg yolks and add them separately into your pot, stirring through each individually.
Turn your mixmaster on to get the egg whites up to a soft peak.
While the egg whites are mixing whisk the flour in three stages into your chocolate mix and trasnfer to a mixing bowl. Add the egg whites to your mixing bowl and fold them through.
Line your cake tin and pour your cake mixture in evenly and place in the oven for 55 minutes.
To make the whisky cream add the cream, whisky and icing sugar into your mixmaster and combine until a soft peak is reached then place in the fridge.
Ensure the cake is cooled once it's finished in the oven to avoid the cream from melting.
Evenly spread the cream onto the cake and garnish with the blueberries and coffee beans.
