PAN-ROASTED CHICKEN WITH MUSHROOMS & GREENS
PREPARATION: 10min ~ COOK: 10min ~ READY IN: 25min
2 chicken breast, (skin on)
6 swiss brown mushrooms
100 g oyster mushrooms
100 g Ashgrove Garlic & Herb Butter
1 dash cream
100 g white truffle
1 bunch broccolini
1 bunch green beans
- Start your chicken in a cold pan and bring it up to heat and cook until golden brown, approximately 10 minutes. Remove the chicken from the pan and set aside.
- Into the pan add your mushrooms, and sauté with herb butter until tender but not too soft. Into a pot of boiling salted water cook your greens until al dente then remove from the pot and add to the pan with the mushrooms.
- Add some cream and grated truffle to the mushrooms and greens, cook through around 3 minutes.
- To plate carve the chicken and place into a bowl with your greens and mushrooms. Shave extra truffle over the top.
