HOME MADE RICOTTA
- Pour each milk into a pot over medium to high heat. Stir in a circular motion and bring temperature to up to 65°C / 70°C.When the mixture reaches temperature stir again in a waving motion for 2 minutes. Turn heat off and let cool for 30 minutes.
- Scoop out the curds into a sieve adding a pinch of salt and let drain. Cover with cling wrap and leave in fridge over night to set.
BEN'S TIP: When stirring make sure it’s a gentle stir and not to fast, firstly in a circular motion then in a wave.
