GERONIMO'S HEIRLOOM TOMATO SALAD
- Into a large bowl place blanched and heirloom tomatoes. Crumb the olives over the tomatoes and add the dehydrated tomatoes.
- Pour house dressing and basil oil over the tomatoes, season with salt and pepper and toss, then add anchovies.
- Serve with basil and sorbet.
BEN'S TIP: If you don't have olive sorbet you can use a olive dressing. If you don't have a dehydrator you can place olives and tomatoes into a low oven and leave over night to dehydrate. Please note house dressing was a secret recipe.
