GERONIMO'S BRASSICA & BEETROOT SALAD
- Smear beetroot puree in a bowl and place charred brassica and broccoli on top. Season beetroot, then add to the brassica taking care of presentation.
- As artistically as you can add small dollops of cauliflower puree. Spoon over wade gel.
- Serve sprinkled with puff rice and white quinoa.
BEN'S TIP: Brassica family are cauliflower, broccoli and kale.
