KINGFISH SASHIMI & MACADAMIA GAZPACHO
- To make gazpacho, into a food processor add macadamia nuts, grapes and verjuice then blitz until smooth. Add lemon juice, salt and oil, blitz for 1 minute to combine.
- Into a bowl add tomatoes, oil and juice from lemon cheek, season with black salt.
- Spoon gazpacho onto a plate, add tomatoes, king fish roasted grapes and celery leaves season to taste.
BEN'S TIP: Roast grapes in a 120°C oven for 30 minutes.
