PERI-PERI CHICKEN SKEWERS
- Into a bowl place oil, smoked paprika, cayenne pepper, juice of half a lemon, garlic and chicken, then stir to coat and leave to marinade. Place the remaining half of lemon on grill to char.
- For dressing combine coriander, juice from charred lemon and yoghurt.
- Thread one piece of chicken onto skewer followed by oregano and repeat. Place them onto the grill, and cook for 3 - 4 minutes each side or until chicken is cooked.
- Serve with dressing and charred lemon.
BEN'S TIP: If using bamboo skewers soak in water before use.
