FANCY MAC & CHEESE
- Heat oil in a frying pan over a medium heat. Add pancetta, shallots and garlic, cook for 5 minutes or until translucent and golden in colour.
- Deglaze the pan with wine and turn heat to high, cook for 2 minutes to reduce. Add cream and cheeses to sauce and check for seasoning.
- Add Barilla Maccheroni to the sauce toss to coat, add thyme and stir.
BEN'S TIP: Cook pasta as usual but leave it slightly undercooked. Drain and toss with a little olive oil and store in a sealed container in the refrigerator until needed.
