PANCAKES WITH FIGS
- In a pot on medium heat place butter and melt, in a bowl add 1 cup of flour, egg, vanilla, baking powder, caster sugar (reserving 2 tbsp for figs), milk and salt. Stir until it all comes together. Once butter has melted add to the mix, stir gently to combine.
- In a warm pan, spoon out the required amount of batter and cook until small bubbles appear then flip over and cook until golden in colour.
- Cut figs in half and dip cut side down into sugar to coat. Blow torch until sugar has caramelised.
- Serve with goats cheese, figs and maple syrup.
BEN'S TIPS: Add more milk and butter if needed.
