FRESH KINGFISH SALAD
- Place the fennel and onion into a bowl of iced water and set aside.
- For the dressing, squeeze juice of ½ lemon into a jar, add oil, KEEN'S Mustard Powder and salt and shake until emulsified.
- To serve, place fennel and onion onto a plate add cranberries, fish, mint and dressing, salt to taste.
BEN'S TIP: If you don't have a mandolin, slice fennel as finely as possible with a knife.
