FOREST MUSHROOMS WITH CHICKEN PASTA
1 tbsp oil
8 button mushrooms
300 g - 500 g chicken mince
5 sprigs of thyme, leaves only
50 g mixed dried mushrooms, reconstituted in 15 ml boiling water
1 garlic, diced
1 cup cream
1/2 bunch chives, torn
250 g Barilla Penne Rigate, pre cooked
5 oyster mushrooms, torn
Salt, to taste
Parmesan cheese, grated to taste
- Heat the oil in a large pan over medium/ high heat . Add button mushrooms leave for 2 minutes until mushrooms are soft.
- Add chicken mince and cook until caramelised or around 2 minutes.. Add thyme, reconstituted mushrooms, garlic and cook 5 minutes stirring occasionally.
- Add cream and turn to a medium heat, add chives, pasta and stir though. Add oyster mushrooms and salt. Serve with cheese to taste.
BEN'S TIP: to reconstitute the mushrooms, place them in of 15ml boiling water for 5 minutes. The mushrooms we used were Porcini and Morels.
