STRAWBERRY RHUBARB BALSAMIC GALETTE
- Preheat oven 180°C. Into a bowl, place lemon zest, thyme, strawberries, vanilla, rhubarb, sugar and then mix until fruit is well coated. Add balsamic vinegar then gently mix and set aside.
- Cut a circle out of the pastry using a dinner plate as a guide. Place pastry onto a baking tray and carefully arrange strawberries and rhubarb onto pastry about 3cm in from the edge.
- Fold the edge of the pastry to form a bowl, place in oven, bake for 25 minutes. Serve with mascarpone.
