KEEN'S BUTTER FRIED FISH
- Make a compound butter, into a food processor add butter, garlic and KEEN'S Curry Powder, blitz until smooth. Place onto cling wrap, roll up to form a log shape and put into the fridge for 30 minutes or until set.
- Slice a mendelian of butter and place into a girdle pan on medium heat. Once butter has melted place fish into pan. Add more butter and constantly baste the fish whilst cooking for 2 minutes, then turn and continue basting with butter from pan and cook for a further minute add salt to taste.
- Serve with a squeeze of lemon.
BEN'S TIP: You can add lemon juice to the pan just before serving fish. If you have a bigger piece of fish don't put butter in first as it will burn. In at the last 2 minutes of cooking time on first side add butter and baste fish. This compound butter recipe can also be used with Chicken or Lamb.
