CRISPY SKIN STRIPED TRUMPETER
- Into a pan on low heat add oil and place fish skin side down making sure the skin is in full contact with the pan (you may need to push the fish down with your hand) season to taste. Cook for 3 ½ minutes then turn for 30 seconds, check that the skin is crispy before turning. Turn pan off so as not to over cook the fish, leave fish in pan for a further 1 minute.
- Serve with lemon.
BEN'S TIP: Take fish out of fridge 10 minutes prior to cooking to get to room temp.
