BAKED STRIPED TRUMPETER
- Pre-heat oven 180°C. Tear off 2 pieces of tin foil large enough to hold the fish, line each with baking paper, fold each side in 2 ½ cm. Place fish on top of baking paper season with salt.
- Arrange the fennel, lemon, onion, olives, tomatoes, chives and dill over the fish. Place the second piece of foil with baking paper side down over the fish and fold to make a seal. Place onto a tray and bake for 16 minutes.
BEN'S TIP: This process can be used with any type of white flesh fish.
