OYSTERS WITH PICKLED GINGER & RHUBARB
- Into a pot with pickling liquor that has been brought to the boil add rhubarb, ginger and cook for 2 minutes then turn off and allow to cool.
- Once cooled strain liquid off and place rhubarb and ginger into a bowl. Add onion, apple, oil, salt, stir and spoon onto the oysters.
- Pickling liquor, 1/2 cup white sugar, 1/2 cup white vinegar, 1/2 cup water. Place all ingredients into a pot. Bring to the boil then simmer for 10 minutes.
BEN'S TIP: You can replace the sugar and vinegar with honey and lemon in pickling liquor.
