LAMB LOLLIPOPS WITH ANCHOVY MAYO
- Heat the oil in a large pan over high heat add lamb skin side down.
- Into a bowl add anchovies, lemon and salt. Using a spoon break up the anchovies into a paste, then add mayonnaise, chives and peppercorns and taste for seasoning.
- Reduce heat. Cook lamb for 10 minutes turning constantly so that the rack doesn't burn. Rest 5 minutes.
- To serve, cut the chops from rack and place onto a serving plate and spoon over dressing.
BEN'S TIP: If you have a larger piece of lamb, sear the rack then place into an oven 180°C for 8 minutes. The dressing can also be used with chicken, beef or fish.
