- Add eggs and sage to a pot of boiling water cook and for 4 1/2 - 5 minutes. Meanwhile add yoghurt, garlic, chilli, mint, salt and oil to a bowl and stir to combine.
- Once eggs are cook place them into a bowl of ice water to stop the cooking process. Remove shell, place 3 of the eggs into the bowl of yoghurt mix, breaking them up, mix to combine.
- To serve, place 3 slices of toast onto a serving plate and spread with the yoghurt mix add a pinch of chilli, place last egg on top. Add salt to taste.
