33 CUPS' DATE & CARAMEL CHEESECAKES
- Method for date & caramel sauce, drain dates and place into a food processor. Add maple syrup, butter and vanilla, blitz for 1 minute, scrap sides of bowl and blitz again until smooth. Spoon 1 tbsp of mixture into a jar.
- Method for cheesecake add cream cheese, sugar and vanilla to a food processor and blitz, scrap down sides blitz until smooth. Meanwhile whip cream in a mixer until light and fluffy. Gently fold cream cheese through the cream until combined. Place mixture into a piping bag and pipe into jar until 3/4 full, add another layer of date mixture and finish with layer of cream.
- Method for crumb, place biscuits into a food processor blitz until it resembles sand, add melted butter and blitz until combined. Place crumb on top of cream layer.
- Serve with garnishes of chocolate squares, dates, star ansi and micro herbs.
