- Into a large bowl add the zucchinis, cheese, eggs, flour, salt and pepper. With a metal spoon gently fold the mixture until combined. Into a pan on a medium/high heat add oil and allow to heat up, then add a heaped tbsp of mixture to pan cook until you can see colour forming then turn. Turn again and cook until fritters are cooked through.
- Meanwhile add kale, almonds, avocado, feta to a bowl and toss, set aside.
- To serve place fritters onto a plate and top with kale salad, salmon and herbs for garnish.
